A delicious Zucchini Parmesan Casserole that is easy to prepare.
Ingredients

- 4 medium zucchinis, sliced
- 1 cup grated Parmesan cheese
- 2 cups breadcrumbs
- 2 eggs, beaten
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 1 cup marinara sauce
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine sliced zucchinis, salt, pepper, garlic powder, and oregano.
- Add beaten eggs and mix well.
- Layer half of the zucchini mixture in a greased casserole dish.
- Spread half of the marinara sauce over the zucchini.
- Sprinkle half of the Parmesan cheese and breadcrumbs over the sauce.
- Repeat the layers with the remaining zucchini, sauce, cheese, and breadcrumbs.
- Bake for 30-35 minutes until golden brown.
Notes
- Let it cool for a few minutes before serving.
- Can be stored in the refrigerator for up to 3 days.
- Pairs well with a side salad.
