Description

A delicious Zucchini Parmesan Casserole that is easy to prepare.


Ingredients

  • 4 medium zucchinis, sliced
  • 1 cup grated Parmesan cheese
  • 2 cups breadcrumbs
  • 2 eggs, beaten
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried oregano
  • 1 cup marinara sauce

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine sliced zucchinis, salt, pepper, garlic powder, and oregano.
  3. Add beaten eggs and mix well.
  4. Layer half of the zucchini mixture in a greased casserole dish.
  5. Spread half of the marinara sauce over the zucchini.
  6. Sprinkle half of the Parmesan cheese and breadcrumbs over the sauce.
  7. Repeat the layers with the remaining zucchini, sauce, cheese, and breadcrumbs.
  8. Bake for 30-35 minutes until golden brown.

Notes

  • Let it cool for a few minutes before serving.
  • Can be stored in the refrigerator for up to 3 days.
  • Pairs well with a side salad.
