Description
A healthy twist on traditional Pad Thai using zucchini noodles and shrimp.
Ingredients

- 2 medium zucchinis
- 8 oz shrimp, peeled and deveined
- 2 cloves garlic, minced
- 2 eggs
- 1 cup bean sprouts
- 1/4 cup peanuts, chopped
- 3 tablespoons soy sauce
- 1 tablespoon fish sauce
- 1 tablespoon lime juice
- 2 tablespoons green onions, chopped
Instructions
- Spiralize the zucchinis to make noodles.
- Heat a skillet over medium heat, add shrimp, and cook until pink.
- Add garlic and cook for 1 minute.
- Push shrimp to one side, crack eggs, and scramble them.
- Add zucchini noodles, bean sprouts, soy sauce, fish sauce, and lime juice.
- Toss everything together and cook for 2-3 minutes.
- Garnish with peanuts and green onions before serving.
Notes
- Adjust sauces to taste.
- For a vegetarian option, replace shrimp with tofu.
