Description

A healthy twist on traditional Pad Thai using zucchini noodles and shrimp.


Ingredients

Scale
  • 2 medium zucchinis
  • 8 oz shrimp, peeled and deveined
  • 2 cloves garlic, minced
  • 2 eggs
  • 1 cup bean sprouts
  • 1/4 cup peanuts, chopped
  • 3 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon lime juice
  • 2 tablespoons green onions, chopped

Instructions

  1. Spiralize the zucchinis to make noodles.
  2. Heat a skillet over medium heat, add shrimp, and cook until pink.
  3. Add garlic and cook for 1 minute.
  4. Push shrimp to one side, crack eggs, and scramble them.
  5. Add zucchini noodles, bean sprouts, soy sauce, fish sauce, and lime juice.
  6. Toss everything together and cook for 2-3 minutes.
  7. Garnish with peanuts and green onions before serving.
