Ingredients

Scale
  • 2 medium zucchinis, grated
  • 1/2 teaspoon salt
  • 1/4 cup all-purpose flour
  • 1/4 cup grated Parmesan cheese
  • 1 large egg
  • 1/4 teaspoon black pepper
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • Oil for frying

Instructions

  1. Grate the zucchinis and place them in a bowl.
  2. Add salt and let them sit for 10 minutes.
  3. Squeeze out excess moisture from the zucchinis.
  4. In a mixing bowl, combine grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and onion powder.
  5. Heat oil in a skillet over medium heat.
  6. Drop spoonfuls of the mixture into the skillet.
  7. Fry until golden brown, about 3-4 minutes per side.
  8. Remove from skillet and drain on paper towels.

Notes
