Crispy and flavorful zucchini fritters that are easy to make.
Ingredients

- 2 medium zucchinis, grated
- 1/2 teaspoon salt
- 1/4 cup all-purpose flour
- 1/4 cup grated Parmesan cheese
- 1 large egg
- 1/4 teaspoon black pepper
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- Oil for frying
Instructions
- Grate the zucchinis and place them in a bowl.
- Add salt and let them sit for 10 minutes.
- Squeeze out excess moisture from the zucchinis.
- In a mixing bowl, combine grated zucchini, flour, Parmesan cheese, egg, black pepper, garlic powder, and onion powder.
- Heat oil in a skillet over medium heat.
- Drop spoonfuls of the mixture into the skillet.
- Fry until golden brown, about 3-4 minutes per side.
- Remove from skillet and drain on paper towels.
Notes
- Serve warm with yogurt or sour cream.
- Store leftovers in the refrigerator.
- Can be made gluten-free by using gluten-free flour.
