Ingredients

- 2 cups Tuscan white beans
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 onion, chopped
- 2 cups vegetable broth
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- Rinse and soak the beans overnight.
- In a pot, heat olive oil over medium heat.
- Add garlic and onion; sauté until soft.
- Add soaked beans, broth, thyme, salt, and pepper.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Serve warm.

- This dish is great with crusty bread.
- Beans can be cooked in a slow cooker for convenience.
