Description
A healthy and filling salad made with tuna and chickpeas.
Ingredients
Scale
- 1 can tuna, drained
- 1 can chickpeas, rinsed and drained
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup cucumber, diced
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine tuna and chickpeas.
- Add cherry tomatoes, red onion, and cucumber.
- In a small bowl, whisk together olive oil and lemon juice.
- Pour the dressing over the salad.
- Toss to combine.
- Season with salt and pepper.
- Serve immediately or chill before serving.
Notes
- This salad can be made a day ahead.
- Store leftovers in the refrigerator.
