Description

A delicious sandwich featuring layers of crispy bacon, three types of gooey cheese, fresh arugula, and barbecue sauce, all nestled between soft brioche buns.


Ingredients

  • Thick-cut bacon: 8 slices
  • Cheddar cheese: 1 cup, shredded
  • Mozzarella cheese: 1 cup, shredded
  • Pepper jack cheese: 1 cup, shredded
  • Brioche buns: 2 large
  • Barbecue sauce: 1/4 cup (plus more for serving)
  • Fresh arugula: 1 cup
  • Olive oil: 1 tablespoon (for toasting the buns)
  • Salt and pepper: to taste

Instructions

  1. Shred the cheddar, mozzarella, and pepper jack cheese and mix them in a bowl.
  2. Wash the fresh arugula and pat it dry.
  3. In a skillet over medium heat, cook the thick-cut bacon until crispy, about 6-8 minutes per side.
  4. Transfer the cooked bacon to a paper towel-lined plate to drain excess grease.
  5. Take the bottom half of each toasted brioche bun and layer half of the cheese mixture on each bun.
  6. Add four slices of crispy bacon on top of the cheese.
  7. Sprinkle the remaining cheese mixture over the bacon.
  8. Grill the assembled sandwiches in the skillet over low heat, covered, for 3-5 minutes until the cheese melts.
  9. Add fresh arugula and drizzle barbecue sauce on top before placing the top half of the brioche bun on the sandwich.
