Description
A delicious sandwich featuring layers of crispy bacon, three types of gooey cheese, fresh arugula, and barbecue sauce, all nestled between soft brioche buns.
Ingredients
- Thick-cut bacon: 8 slices
- Cheddar cheese: 1 cup, shredded
- Mozzarella cheese: 1 cup, shredded
- Pepper jack cheese: 1 cup, shredded
- Brioche buns: 2 large
- Barbecue sauce: 1/4 cup (plus more for serving)
- Fresh arugula: 1 cup
- Olive oil: 1 tablespoon (for toasting the buns)
- Salt and pepper: to taste
Instructions
- Shred the cheddar, mozzarella, and pepper jack cheese and mix them in a bowl.
- Wash the fresh arugula and pat it dry.
- In a skillet over medium heat, cook the thick-cut bacon until crispy, about 6-8 minutes per side.
- Transfer the cooked bacon to a paper towel-lined plate to drain excess grease.
- Take the bottom half of each toasted brioche bun and layer half of the cheese mixture on each bun.
- Add four slices of crispy bacon on top of the cheese.
- Sprinkle the remaining cheese mixture over the bacon.
- Grill the assembled sandwiches in the skillet over low heat, covered, for 3-5 minutes until the cheese melts.
- Add fresh arugula and drizzle barbecue sauce on top before placing the top half of the brioche bun on the sandwich.
