Description

A refreshing tortellini pasta salad perfect for gatherings.


Ingredients

  • 2 cups tortellini
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup red onion, chopped
  • 1/2 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the tortellini according to package instructions. Drain and cool.
  2. In a large bowl, combine the tortellini, cherry tomatoes, cucumber, red onion, black olives, and feta cheese.
  3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Refrigerate for at least 30 minutes before serving.

Notes

  • Feel free to add other vegetables.
  • Can be made a day ahead.
