- 1 pound potato gnocchi
- 2 cups cherry tomatoes
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup fresh basil leaves
- 8 ounces burrata cheese
Instructions
- Boil water in a large pot and cook the gnocchi according to package instructions.
- In a pan, heat olive oil over medium heat.
- Add minced garlic and sauté until fragrant.
- Add cherry tomatoes, salt, and pepper. Cook until tomatoes soften.
- Drain gnocchi and add to the pan. Toss to combine.
- Remove from heat and stir in fresh basil.
- Serve topped with burrata cheese.
Notes
- For extra flavor, add red pepper flakes.
- Substitute regular tomatoes if cherry tomatoes are unavailable.
- Gnocchi can be homemade or store-bought.
