Description

A flavorful dish featuring chicken and pineapple stuffed in bell peppers.


Ingredients

  • 2 large bell peppers
  • 1 pound chicken breast, diced
  • 1 cup pineapple chunks
  • 1/4 cup teriyaki sauce
  • 1/2 cup cooked rice
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, heat olive oil over medium heat.
  4. Add diced chicken and cook until no longer pink.
  5. Stir in pineapple chunks and teriyaki sauce, cooking for another 2-3 minutes.
  6. Mix in the cooked rice and season with salt and pepper.
  7. Stuff the bell peppers with the chicken mixture.
  8. Place stuffed peppers in a baking dish and cover with foil.
  9. Bake for 25-30 minutes or until peppers are tender.

Notes

  • You can use any color of bell pepper.
