- 1 lb ground beef
- 1 packet taco seasoning
- 1 can black beans, drained
- 1 cup corn
- 1 cup diced tomatoes
- 1 cup shredded cheese
- 1 avocado, sliced
- 1/4 cup chopped cilantro
- Sour cream, for serving
Instructions
- Cook the rice according to package instructions.
- In a skillet, brown the ground beef over medium heat.
- Add taco seasoning to the beef and mix well.
- Stir in black beans and corn, heat through.
- In a bowl, layer the cooked rice, beef mixture, diced tomatoes, and cheese.
- Top with avocado slices and cilantro.
- Serve with sour cream on the side.
