A fresh and healthy salad inspired by spring rolls, packed with vegetables and a zesty dressing.
Ingredients

- 1 cup rice noodles
- 1 cup shredded cabbage
- 1 cup shredded carrots
- 1 cup sliced bell peppers
- 1/2 cup chopped fresh cilantro
- 1/2 cup sliced green onions
- 1/4 cup crushed peanuts
- 2 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon sesame oil
- 1 tablespoon honey
Instructions
- Cook rice noodles according to package instructions. Drain and set aside.
- In a large bowl, combine cabbage, carrots, bell peppers, cilantro, and green onions.
- Add cooked noodles to the vegetable mixture.
- In a small bowl, whisk together soy sauce, lime juice, sesame oil, and honey.
- Pour dressing over the salad and toss to combine.
- Top with crushed peanuts before serving.
Notes
- Use any seasonal vegetables you like.
- Make it vegan by omitting honey or using agave syrup.
