Description

A fresh and flavorful salad with a southwestern twist.


Ingredients

  • 1 head of romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1 cup corn, canned or fresh
  • 1 cup black beans, rinsed and drained
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • 1/2 cup shredded cheese (optional)
  • 1/4 cup lime juice
  • 1/4 cup olive oil
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the romaine lettuce, cherry tomatoes, corn, black beans, avocado, red onion, and cilantro.
  2. In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
  3. Pour the dressing over the salad and toss to combine.
  4. If desired, sprinkle shredded cheese on top.
  5. Serve immediately.

Notes

  • This salad can be made ahead of time. Just add the avocado just before serving to prevent browning.
  • Feel free to add grilled chicken for extra protein.
