A fresh and flavorful salad with a southwestern twist.
Ingredients

- 1 head of romaine lettuce, chopped
- 1 cup cherry tomatoes, halved
- 1 cup corn, canned or fresh
- 1 cup black beans, rinsed and drained
- 1 avocado, diced
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1/2 cup shredded cheese (optional)
- 1/4 cup lime juice
- 1/4 cup olive oil
- 1 tsp cumin
- Salt and pepper to taste
Instructions
- In a large bowl, combine the romaine lettuce, cherry tomatoes, corn, black beans, avocado, red onion, and cilantro.
- In a separate bowl, whisk together lime juice, olive oil, cumin, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- If desired, sprinkle shredded cheese on top.
- Serve immediately.
Notes
- This salad can be made ahead of time. Just add the avocado just before serving to prevent browning.
- Feel free to add grilled chicken for extra protein.
