Description

Delicious Southwest Eggrolls filled with a blend of flavors.


Ingredients

  • 1 cup black beans, drained and rinsed
  • 1 cup corn, drained
  • 1 cup cooked chicken, shredded
  • 1/2 cup bell pepper, diced
  • 1/2 cup onion, diced
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 1 cup shredded cheese
  • 10 eggroll wrappers
  • Oil for frying

Instructions

  1. In a bowl, combine black beans, corn, chicken, bell pepper, onion, cumin, chili powder, and cheese.
  2. Place a spoonful of the mixture onto an eggroll wrapper.
  3. Roll the wrapper tightly and seal the edges with water.
  4. Heat oil in a pan over medium heat.
  5. Fry the eggrolls until golden brown, about 3-4 minutes per side.
  6. Drain on paper towels before serving.

Notes

  • Serve with salsa or dipping sauce.
  • Can be baked instead of fried for a healthier option.
