Delicious Southwest Eggrolls filled with a blend of flavors.
Ingredients

- 1 cup black beans, drained and rinsed
- 1 cup corn, drained
- 1 cup cooked chicken, shredded
- 1/2 cup bell pepper, diced
- 1/2 cup onion, diced
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 cup shredded cheese
- 10 eggroll wrappers
- Oil for frying
Instructions
- In a bowl, combine black beans, corn, chicken, bell pepper, onion, cumin, chili powder, and cheese.
- Place a spoonful of the mixture onto an eggroll wrapper.
- Roll the wrapper tightly and seal the edges with water.
- Heat oil in a pan over medium heat.
- Fry the eggrolls until golden brown, about 3-4 minutes per side.
- Drain on paper towels before serving.
Notes
- Serve with salsa or dipping sauce.
- Can be baked instead of fried for a healthier option.
