Classic Southern potato salad with creamy dressing and crunchy vegetables.
Ingredients

- 2 pounds potatoes, peeled and diced
- 1 cup mayonnaise
- 2 tablespoons mustard
- 1/2 cup celery, diced
- 1/2 cup red onion, diced
- 3 hard-boiled eggs, chopped
- 1 tablespoon vinegar
- Salt and pepper to taste
Instructions
- Boil the potatoes until tender, about 15 minutes.
- Drain and cool the potatoes.
- In a bowl, mix mayonnaise, mustard, and vinegar.
- Add celery, onion, eggs, salt, and pepper to the dressing.
- Combine the cooled potatoes with the dressing mixture.
- Chill in the refrigerator for at least 1 hour before serving.
Notes
- Adjust seasoning to your taste.
- Feel free to add pickles for extra flavor.
