Description

Classic Southern potato salad with creamy dressing and crunchy vegetables.


Ingredients

  • 2 pounds potatoes, peeled and diced
  • 1 cup mayonnaise
  • 2 tablespoons mustard
  • 1/2 cup celery, diced
  • 1/2 cup red onion, diced
  • 3 hard-boiled eggs, chopped
  • 1 tablespoon vinegar
  • Salt and pepper to taste

Instructions

  1. Boil the potatoes until tender, about 15 minutes.
  2. Drain and cool the potatoes.
  3. In a bowl, mix mayonnaise, mustard, and vinegar.
  4. Add celery, onion, eggs, salt, and pepper to the dressing.
  5. Combine the cooled potatoes with the dressing mixture.
