Ingredients

  • 2 cups chicken breast, diced
  • 1/2 cup peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup coconut milk
  • 2 tablespoons lime juice
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, grated
  • 1 tablespoon honey
  • 1/4 teaspoon red pepper flakes
  • 2 green onions, sliced for garnish

Instructions

  1. In a bowl, mix peanut butter, soy sauce, coconut milk, lime juice, garlic, ginger, honey, and red pepper flakes.
  2. Heat a skillet over medium heat and add the diced chicken.
  3. Cook the chicken until browned and cooked through.
  4. Pour the peanut sauce over the chicken and stir to coat.
  5. Simmer for 5 minutes until heated through.
  6. Garnish with sliced green onions before serving.
