A delicious Thai-inspired dish featuring chicken coated in a creamy peanut sauce.
Ingredients

- 2 cups chicken breast, diced
- 1/2 cup peanut butter
- 1/4 cup soy sauce
- 1/4 cup coconut milk
- 2 tablespoons lime juice
- 2 cloves garlic, minced
- 1 tablespoon ginger, grated
- 1 tablespoon honey
- 1/4 teaspoon red pepper flakes
- 2 green onions, sliced for garnish
Instructions
- In a bowl, mix peanut butter, soy sauce, coconut milk, lime juice, garlic, ginger, honey, and red pepper flakes.
- Heat a skillet over medium heat and add the diced chicken.
- Cook the chicken until browned and cooked through.
- Pour the peanut sauce over the chicken and stir to coat.
- Simmer for 5 minutes until heated through.
- Garnish with sliced green onions before serving.
Notes
- Serve with rice or noodles.
- Adjust spice level by adding more or less red pepper flakes.
- Store leftovers in the refrigerator for up to 3 days.
