Ingredients

- 1 cup unsalted butter, softened
- 1 cup granulated sugar
- 1/2 cup powdered sugar
- 1 large egg
- 2 tablespoons pink lemonade concentrate
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- Pink sprinkles for decoration
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, cream together the butter, granulated sugar, and powdered sugar until smooth.
- Add the egg, pink lemonade concentrate, and vanilla extract. Mix until well combined.
- In another bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet ingredients. Mix until just combined.
- Drop rounded tablespoons of dough onto a baking sheet.
- Sprinkle pink sprinkles on top of each cookie.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack.
Notes
- Store cookies in an airtight container for up to a week.
- For extra flavor, add lemon zest to the dough.
- Adjust the amount of pink lemonade concentrate to taste.
