Description
A refreshing salad featuring peaches and watermelon.
Ingredients

- 2 ripe peaches, sliced
- 2 cups watermelon, cubed
- 1/4 cup red onion, thinly sliced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh mint leaves, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine peaches, watermelon, and red onion.
- Add feta cheese and mint leaves.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Drizzle dressing over salad and toss gently.
- Serve immediately or chill for 30 minutes before serving.

- Substitute feta with goat cheese for a different taste.
