Description

Ingredients

  • 2 medium zucchinis
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Slice zucchinis into fry shapes.
  3. In a bowl, mix breadcrumbs, Parmesan, garlic powder, salt, and pepper.
  4. In another bowl, beat the eggs.
  5. Dip each zucchini slice in egg, then coat with the breadcrumb mixture.
  6. Place coated zucchini on a baking sheet lined with parchment paper.
  7. Bake for 20-25 minutes until golden brown.
