Description

A refreshing orzo salad packed with vegetables and a tangy dressing.


Ingredients

  • 1 cup orzo pasta
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon oregano
  • Salt and pepper to taste

Instructions

  1. Cook the orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cherry tomatoes, cucumber, bell pepper, red onion, and feta cheese.
  3. Add the cooled orzo to the bowl.
  4. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper.
  5. Pour the dressing over the salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
