- 2 cups pasta
- 1 pound chicken breast, diced
- 1 can diced tomatoes
- 1 cup chicken broth
- 1 cup shredded cheese
- 1 tablespoon chipotle seasoning
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Add onion and garlic, sauté until soft.
- Add diced chicken and cook until browned.
- Stir in chipotle seasoning, salt, and pepper.
- Add diced tomatoes, chicken broth, and pasta.
- Bring to a boil, then reduce heat to simmer.
- Cook until pasta is tender, about 15 minutes.
- Stir in shredded cheese until melted.
- Serve hot.
