Description

Ingredients

  • 1 cup couscous
  • 1 1/4 cups boiling water
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 3 tablespoons olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine couscous and boiling water. Cover and let sit for 5 minutes.
  2. Fluff couscous with a fork and let it cool.
  3. Add cherry tomatoes, cucumber, red onion, feta cheese, and parsley to the couscous.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and mix well.
  6. Chill in the refrigerator for 30 minutes before serving.
