Ingredients

- 1 cup couscous
- 1 1/4 cups boiling water
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/2 red onion, finely chopped
- 1/2 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt and pepper to taste
Instructions
- In a bowl, combine couscous and boiling water. Cover and let sit for 5 minutes.
- Fluff couscous with a fork and let it cool.
- Add cherry tomatoes, cucumber, red onion, feta cheese, and parsley to the couscous.
- In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
- Pour the dressing over the salad and mix well.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- Substitute quinoa for a gluten-free option.
- Add olives for extra flavor.
- Store leftovers in an airtight container in the fridge.
