Description

A refreshing mango curd tart with a buttery crust.


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup sugar
  • 1/4 teaspoon salt
  • 1 egg yolk
  • 2 tablespoons ice water
  • 2 ripe mangoes, pureed
  • 3/4 cup sugar
  • 1/4 cup lemon juice
  • 3 eggs
  • 1/4 cup cornstarch
  • 1 tablespoon butter

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix flour, butter, sugar, and salt.
  3. Add egg yolk and ice water, mix until dough forms.
  4. Press dough into a tart pan and chill for 30 minutes.
  5. Bake the crust for 20 minutes until lightly golden.
  6. In a saucepan, combine mango puree, sugar, lemon juice, and eggs.
  7. Whisk in cornstarch and cook over medium heat until thickened.
  8. Remove from heat, stir in butter, and let cool.
  9. Pour mango curd into the baked crust and chill for at least 2 hours.

Notes

  • Use ripe mangoes for best flavor.
  • Store leftovers in the refrigerator.
  • Serve with whipped cream if desired.
