Description
A refreshing mango curd tart with a buttery crust.
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup sugar
- 1/4 teaspoon salt
- 1 egg yolk
- 2 tablespoons ice water
- 2 ripe mangoes, pureed
- 3/4 cup sugar
- 1/4 cup lemon juice
- 3 eggs
- 1/4 cup cornstarch
- 1 tablespoon butter
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, mix flour, butter, sugar, and salt.
- Add egg yolk and ice water, mix until dough forms.
- Press dough into a tart pan and chill for 30 minutes.
- Bake the crust for 20 minutes until lightly golden.
- In a saucepan, combine mango puree, sugar, lemon juice, and eggs.
- Whisk in cornstarch and cook over medium heat until thickened.
- Remove from heat, stir in butter, and let cool.
- Pour mango curd into the baked crust and chill for at least 2 hours.
Notes
- Use ripe mangoes for best flavor.
- Store leftovers in the refrigerator.
- Serve with whipped cream if desired.
