Ingredients

  • 1 small onion, diced
  • 1 can (15 oz) diced tomatoes
  • 1 cup bell peppers, diced
  • 1 cup shredded cheddar cheese
  • 1 tsp taco seasoning
  • 2 cups cauliflower rice
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, brown the ground beef with diced onion.
  3. Add bell peppers, diced tomatoes, and taco seasoning. Cook until heated through.
  4. Stir in cauliflower rice and mix well.
  5. Transfer the mixture to a baking dish.
  6. Top with shredded cheddar cheese.
  7. Bake for 25 minutes or until the cheese is melted and bubbly.
