- 1 lb ground beef
- 1 small onion, diced
- 1 can (15 oz) diced tomatoes
- 1 cup bell peppers, diced
- 1 cup shredded cheddar cheese
- 1 tsp taco seasoning
- 2 cups cauliflower rice
- Salt and pepper to taste
Instructions
- Preheat your oven to 350°F (175°C).
- In a skillet, brown the ground beef with diced onion.
- Add bell peppers, diced tomatoes, and taco seasoning. Cook until heated through.
- Stir in cauliflower rice and mix well.
- Transfer the mixture to a baking dish.
- Top with shredded cheddar cheese.
- Bake for 25 minutes or until the cheese is melted and bubbly.
Notes
- Feel free to add your favorite toppings such as sour cream or avocado.
- Use ground turkey for a lighter option.
