Description

A refreshing lemon orzo pasta salad with fresh ingredients.


Ingredients

  • 1 cup orzo pasta
  • 1/2 cup cherry tomatoes, halved
  • 1/4 cup red onion, diced
  • 1/2 cucumber, diced
  • 1/4 cup feta cheese, crumbled
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook orzo pasta according to package instructions. Drain and let cool.
  2. In a large bowl, combine cherry tomatoes, red onion, cucumber, feta cheese, and parsley.
  3. Add the cooled orzo to the bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour the dressing over the salad and toss gently to combine.
  6. Serve chilled or at room temperature.
