Description

Ingredients

  • 8 oz pasta
  • 1 cup cherry tomatoes, halved
  • 1 cup cucumber, diced
  • 1/2 cup black olives, sliced
  • 1/2 cup bell pepper, diced
  • 1/4 cup red onion, diced
  • 1/2 cup mozzarella cheese, cubed
  • 1/4 cup fresh basil, chopped
  • 1/3 cup olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and cool.
  2. In a large bowl, combine cooked pasta, tomatoes, cucumber, olives, bell pepper, red onion, and mozzarella.
  3. In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
  4. Pour the dressing over the salad and toss to combine.
  5. Add chopped basil and mix gently.
  6. Refrigerate for at least 30 minutes before serving.
