A refreshing Italian pasta salad filled with vibrant vegetables and flavorful dressing.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup black olives, sliced
- 1/2 cup bell pepper, diced
- 1/4 cup red onion, diced
- 1/2 cup mozzarella cheese, cubed
- 1/4 cup fresh basil, chopped
- 1/3 cup olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Cook pasta according to package instructions. Drain and cool.
- In a large bowl, combine cooked pasta, tomatoes, cucumber, olives, bell pepper, red onion, and mozzarella.
- In a small bowl, whisk together olive oil, red wine vinegar, Italian seasoning, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Add chopped basil and mix gently.
- Refrigerate for at least 30 minutes before serving.

- Customize with your favorite vegetables.
- Can be made a day in advance.
- Serve cold or at room temperature.
