Description

A refreshing Italian Cucumber Salad that is easy to prepare and full of flavor.


Ingredients

  • 2 large cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 1/4 cup fresh basil, chopped
  • 1/4 cup olive oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine cucumbers, cherry tomatoes, and red onion.
  2. Add chopped basil to the bowl.
  3. In a small bowl, whisk together olive oil and red wine vinegar.
  4. Pour the dressing over the salad.
  5. Season with salt and pepper.
