A refreshing Italian Cucumber Salad that is easy to prepare and full of flavor.
Ingredients

- 2 large cucumbers, sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 1/4 cup olive oil
- 2 tablespoons red wine vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine cucumbers, cherry tomatoes, and red onion.
- Add chopped basil to the bowl.
- In a small bowl, whisk together olive oil and red wine vinegar.
- Pour the dressing over the salad.
- Season with salt and pepper.
- Toss well to combine.
- Chill in the refrigerator for 30 minutes before serving.
Notes
- For added flavor, you can include feta cheese.
- Serve cold for best taste.
