Description
A refreshing salad made with grilled corn and orzo pasta.
Ingredients

- 1 cup orzo pasta
- 2 ears of corn, grilled and kernels removed
- 1 cup cherry tomatoes, halved
- 1/2 cup red onion, finely chopped
- 1/4 cup fresh basil, chopped
- 1/4 cup feta cheese, crumbled
- 3 tablespoons olive oil
- 2 tablespoons balsamic vinegar
- Salt and pepper to taste
Instructions
- Cook the orzo pasta according to package instructions. Drain and let cool.
- Grill the corn until charred, then remove kernels.
- In a large bowl, combine orzo, corn, cherry tomatoes, red onion, and basil.
- In a small bowl, whisk together olive oil, balsamic vinegar, salt, and pepper.
- Pour the dressing over the salad and toss to combine.
- Sprinkle feta cheese on top before serving.
Notes
- Can be served warm or cold.
- Best when eaten fresh.
- Add grilled chicken for extra protein.
