Ingredients

- 1 cup long-grain rice
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 lemon, juiced and zested
- 1/4 cup fresh parsley, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Rinse the rice under cold water until the water runs clear.
- In a pot, heat olive oil over medium heat.
- Add the rice and sauté for 2-3 minutes until lightly toasted.
- Pour in the vegetable broth, lemon juice, and salt.
- Bring to a boil, then reduce to low heat and cover.
- Cook for 15-20 minutes until the rice is tender and liquid is absorbed.
- Remove from heat and fluff with a fork.
- Stir in lemon zest, parsley, black pepper, and serve.
Notes
- Adjust lemon juice to taste.
- For added flavor, include garlic or onion.
- This dish pairs well with grilled meats or vegetables.
