Description

A refreshing salad combining gnocchi and pesto.


Ingredients

  • 500g gnocchi
  • 1 cup basil pesto
  • 1 cup cherry tomatoes, halved
  • 1/2 cup mozzarella balls
  • 1/4 cup pine nuts, toasted
  • 2 tablespoons olive oil
  • Salt and pepper to taste

Instructions

  1. Cook gnocchi according to package instructions.
  2. Drain and rinse gnocchi under cold water.
  3. In a large bowl, mix gnocchi with pesto.
  4. Add cherry tomatoes and mozzarella balls.
  5. Drizzle with olive oil and season with salt and pepper.
  6. Toss gently to combine.
  7. Sprinkle toasted pine nuts on top before serving.
