A refreshing and light cucumber shrimp salad perfect for summer.
Ingredients

- 2 cups cucumber, diced
- 1 cup cooked shrimp, peeled and deveined
- 1/4 cup red onion, finely chopped
- 1/4 cup celery, diced
- 1/4 cup mayonnaise
- 1 tablespoon lemon juice
- Salt and pepper to taste
Instructions
- In a large bowl, combine cucumber, shrimp, red onion, and celery.
- In a small bowl, mix mayonnaise and lemon juice.
- Pour the dressing over the shrimp mixture.
- Season with salt and pepper.
- Toss gently to combine.
- Chill in the refrigerator for 30 minutes before serving.
