Description
A refreshing salad combining cucumbers and mozzarella.
Ingredients

- 2 cups cucumber, diced
- 1 cup mozzarella cheese, cubed
- 1/4 cup red onion, thinly sliced
- 1/4 cup fresh basil, chopped
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- Salt and pepper to taste
Instructions
- In a large bowl, combine the cucumbers, mozzarella, red onion, and basil.
- In a small bowl, whisk together olive oil and balsamic vinegar.
- Pour the dressing over the salad and toss gently.
- Season with salt and pepper to taste.
- Serve immediately or chill in the refrigerator for 30 minutes.
