Description
A refreshing pasta salad with cilantro and lime.
Ingredients

- 8 oz pasta
- 1 cup cherry tomatoes, halved
- 1 cup corn, fresh or canned
- 1 cup black beans, drained and rinsed
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- 1/4 cup lime juice
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Cook the pasta according to package instructions.
- In a large bowl, combine cooked pasta, tomatoes, corn, black beans, red onion, and cilantro.
- In a separate bowl, whisk together lime juice, olive oil, salt, and pepper.
- Pour the dressing over the pasta salad and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Adjust lime juice to taste.
- Can add avocado for creaminess.
- Best served cold.
