Chocolate raspberry sandwich cookies are delicious treats filled with raspberry jam and chocolate cream.
Ingredients

- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 cup sugar
- 1/4 cup butter, softened
- 1/4 cup raspberry jam
- 1/2 cup powdered sugar
- 1/4 cup heavy cream
- 1 tsp vanilla extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, mix flour, cocoa powder, and sugar.
- Add softened butter and mix until crumbly.
- Roll dough into balls and place on a baking sheet.
- Flatten each ball slightly.
- Bake for 10-12 minutes.
- Let cookies cool completely.
- In another bowl, whip cream, powdered sugar, and vanilla until fluffy.
- Spread chocolate cream on half of the cookies.
- Add a dollop of raspberry jam on top of the cream.
- Top with remaining cookies to form sandwiches.
