Description

A healthy and filling Chicken Sweet Potato Bowl.


Ingredients

Scale
  • 2 cups cooked chicken, shredded
  • 2 medium sweet potatoes, diced
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 cup black beans, drained and rinsed
  • 1 avocado, sliced
  • 1 cup spinach
  • 2 tablespoons lime juice

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
  3. Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
  4. In a bowl, combine shredded chicken and black beans.
  5. Once sweet potatoes are done, assemble the bowl: start with spinach, add chicken and black bean mix, top with roasted sweet potatoes, avocado, and drizzle lime juice.
