A healthy and filling Chicken Sweet Potato Bowl.
Ingredients

- 2 cups cooked chicken, shredded
- 2 medium sweet potatoes, diced
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 cup black beans, drained and rinsed
- 1 avocado, sliced
- 1 cup spinach
- 2 tablespoons lime juice
Instructions
- Preheat your oven to 400°F (200°C).
- In a bowl, toss diced sweet potatoes with olive oil, paprika, garlic powder, salt, and pepper.
- Spread sweet potatoes on a baking sheet and roast for 25-30 minutes until tender.
- In a bowl, combine shredded chicken and black beans.
- Once sweet potatoes are done, assemble the bowl: start with spinach, add chicken and black bean mix, top with roasted sweet potatoes, avocado, and drizzle lime juice.
Notes
- Feel free to add your favorite toppings.
- Store leftovers in an airtight container for up to 3 days.
- This dish can be served warm or cold.
