Ingredients

  • 2 cups cooked chicken, shredded
  • 1 can black beans, drained and rinsed
  • 1 cup corn
  • 1 cup salsa
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • 2 cups cooked rice
  • 2 cups shredded cheese
  • 4 large tortillas, cut into strips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine chicken, black beans, corn, salsa, cumin, and chili powder.
  3. Add cooked rice and mix well.
  4. Layer half of the tortilla strips in a greased baking dish.
  5. Spread half of the chicken mixture over the tortillas.
  6. Sprinkle with half of the cheese.
  7. Repeat the layers with the remaining tortillas, chicken mixture, and cheese.
  8. Bake for 25-30 minutes until cheese is melted and bubbly.
