Ingredients

  • 8 corn tortillas

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a bowl, toss cauliflower with olive oil, chili powder, cumin, garlic powder, and salt.
  3. Spread cauliflower on a baking sheet.
  4. Bake for 20-25 minutes until golden and tender.
  5. Warm corn tortillas in a skillet.
  6. Assemble tacos with roasted cauliflower, avocado, and cabbage.
  7. Garnish with fresh cilantro.
