Description

Ingredients

  • 2 cups broccoli florets
  • 8 ounces pasta
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olive oil
  • 2 tablespoons lemon juice
  • Salt and pepper to taste

Instructions

  1. Cook pasta according to package instructions. Drain and set aside.
  2. Steam broccoli florets until tender, about 3-4 minutes.
  3. In a large bowl, combine cooked pasta, steamed broccoli, cherry tomatoes, red onion, and feta cheese.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper.
  5. Pour dressing over salad and toss to combine.
  6. Chill in the refrigerator for at least 30 minutes before serving.
