Description

Delicious Mexican tacos filled with slow-cooked meat and rich broth.


Ingredients

Scale
  • 2 lbs beef chuck roast
  • 1 lb beef shank
  • 4 dried guajillo chiles
  • 2 dried ancho chiles
  • 4 cloves garlic
  • 1 onion, chopped
  • 2 tsp cumin
  • 2 tsp oregano
  • 4 cups beef broth
  • Salt to taste
  • Tortillas
  • Chopped onion for garnish
  • Cilantro for garnish

Instructions

  1. Toast the chiles in a dry pan until fragrant.
  2. Soak the chiles in hot water for 15 minutes.
  3. Blend the chiles with garlic, onion, cumin, oregano, and a bit of broth until smooth.
  4. In a pot, sear the beef on all sides.
  5. Add the blended sauce and remaining broth to the pot.
  6. Cover and simmer for 3 hours until meat is tender.
  7. Shred the meat and let it soak in the broth.
  8. Warm tortillas and fill with meat.
  9. Garnish with onion and cilantro.

Notes

  • Serve with lime wedges.
  • Use leftover broth as a dipping sauce.
