Description
Delicious Mexican tacos filled with slow-cooked meat and rich broth.
Ingredients

- 2 lbs beef chuck roast
- 1 lb beef shank
- 4 dried guajillo chiles
- 2 dried ancho chiles
- 4 cloves garlic
- 1 onion, chopped
- 2 tsp cumin
- 2 tsp oregano
- 4 cups beef broth
- Salt to taste
- Tortillas
- Chopped onion for garnish
- Cilantro for garnish
Instructions
- Toast the chiles in a dry pan until fragrant.
- Soak the chiles in hot water for 15 minutes.
- Blend the chiles with garlic, onion, cumin, oregano, and a bit of broth until smooth.
- In a pot, sear the beef on all sides.
- Add the blended sauce and remaining broth to the pot.
- Cover and simmer for 3 hours until meat is tender.
- Shred the meat and let it soak in the broth.
- Warm tortillas and fill with meat.
- Garnish with onion and cilantro.
Notes
- Serve with lime wedges.
- Use leftover broth as a dipping sauce.
