A quick and easy one-pan beef enchilada dish.
Ingredients

- 1 lb ground beef
- 1 can black beans, drained
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 cup enchilada sauce
- 2 cups shredded cheese
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Chopped cilantro for garnish
Instructions
- Brown the ground beef in a skillet over medium heat.
- Add black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper.
- Stir in the enchilada sauce and mix well.
- Sprinkle shredded cheese on top.
- Cover and cook until cheese melts.
- Garnish with chopped cilantro before serving.
Notes
- Serve with tortilla chips or rice.
- Can substitute ground turkey for a lighter option.
- Adjust the spice level by adding jalapenos.
