Description

BBQ Chicken Sweet Potatoes is a delicious and filling meal that combines tender chicken with sweet potatoes and BBQ sauce.


Ingredients

  • 2 medium sweet potatoes
  • 1 lb boneless chicken breast
  • 1 cup BBQ sauce
  • 1 tablespoon olive oil
  • Salt to taste
  • Pepper to taste
  • 1 tablespoon chopped parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and pierce the sweet potatoes with a fork.
  3. Place sweet potatoes on a baking sheet and bake for 45 minutes or until tender.
  4. While the sweet potatoes are baking, heat olive oil in a skillet over medium heat.
  5. Season chicken with salt and pepper, then cook in the skillet until browned.
  6. Add BBQ sauce to the skillet, coating the chicken evenly, and cook for an additional 5 minutes.
  7. Once sweet potatoes are done, remove them from the oven and slice them open.
  8. Stuff each sweet potato with BBQ chicken mixture.
  9. Garnish with chopped parsley before serving.
