Description

Baked cod in a creamy coconut lemon sauce.


Ingredients

  • 4 cod fillets
  • 1 can (13.5 oz) coconut milk
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a bowl, mix coconut milk, lemon juice, lemon zest, garlic, olive oil, salt, and pepper.
  3. Place cod fillets in a baking dish.
  4. Pour the coconut mixture over the cod.
  5. Bake for 20 minutes or until the fish is flaky.
  6. Garnish with fresh parsley before serving.
