- 4 cod fillets
- 1 can (13.5 oz) coconut milk
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a bowl, mix coconut milk, lemon juice, lemon zest, garlic, olive oil, salt, and pepper.
- Place cod fillets in a baking dish.
- Pour the coconut mixture over the cod.
- Bake for 20 minutes or until the fish is flaky.
- Garnish with fresh parsley before serving.
