Ingredients
- Rolled oats: 1 cup (90 g)
- All-purpose flour: 1 cup (120 g)
- Brown sugar: 3/4 cup (150 g), packed
- Unsalted butter: 1/2 cup (113 g), melted
- Ground cinnamon: 1 teaspoon
- Fresh apples: 2 medium, peeled, cored, and diced
- Vanilla extract: 1 teaspoon
- Baking powder: 1/2 teaspoon
- Salt: 1/4 teaspoon
- Granulated sugar: 1/4 cup (50 g)
Instructions
- Prepare the apple filling by combining diced apples, granulated sugar, and vanilla extract in a bowl.
- Make the streusel topping by mixing rolled oats, flour, brown sugar, cinnamon, baking powder, and salt, then adding melted butter.
- Press the remaining oat mixture into the bottom of a greased 8×8-inch baking pan.
- Spread the apple filling evenly over the crust.
- Sprinkle the reserved streusel topping over the apples.
- Bake in a preheated oven at 350°F (175°C) for 30-35 minutes until golden brown.
- Let cool for 10-15 minutes before transferring to a wire rack to cool completely before cutting.
