- 2 medium zucchinis
- 1 cup fresh basil leaves
- 1/4 cup pine nuts
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic
- 1/4 cup olive oil
- 1 pound shrimp, peeled and deveined
- Salt and pepper to taste
Instructions
- Spiralize the zucchinis to create noodles.
- In a food processor, combine basil, pine nuts, Parmesan, garlic, and olive oil. Blend until smooth.
- In a skillet, heat a small amount of olive oil over medium heat. Add shrimp and cook until pink, about 3-4 minutes.
- Toss the zucchini noodles with pesto and cooked shrimp.
- Season with salt and pepper to taste.
- Serve immediately.
