Ingredients

- 2 medium zucchinis, grated
- 4 large eggs
- 1 cup shredded cheese
- 1/2 cup diced onion
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 teaspoon garlic powder
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 350°F (175°C).
- Grate the zucchinis and squeeze out excess moisture.
- In a bowl, mix zucchini, eggs, cheese, onion, salt, pepper, and garlic powder.
- Heat olive oil in a pan and sauté the mixture for 5 minutes.
- Transfer the mixture to a greased baking dish.
- Bake for 25-30 minutes until set and golden.
- Let it cool for a few minutes before slicing.
Notes
- Adjust seasoning to taste.
- Can add cooked bacon or sausage for extra flavor.
- Store leftovers in the refrigerator for up to 3 days.
