Description
A refreshing and healthy zucchini basil soup.
Ingredients
Scale
- 4 medium zucchinis, chopped
- 1 onion, diced
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 1 cup fresh basil leaves
- 1 tablespoon olive oil
- Salt to taste
- Pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add onions and garlic, sauté until translucent.
- Add chopped zucchinis and cook for 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Reduce heat and simmer for 15 minutes.
- Add basil and blend until smooth.
- Season with salt and pepper.
- Serve hot.
Notes
- Adjust seasoning according to taste.
- Can be served with a dollop of yogurt for creaminess.
