Ingredients

- 2 cups of broccoli florets
- 2 cups of cauliflower florets
- 1 cup of carrots, sliced
- 1 cup of potatoes, diced
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 cup of vegetable broth
- 1 cup of shredded cheese
- 1 teaspoon of thyme
- 1 teaspoon of salt
- 1/2 teaspoon of pepper
Instructions
- Preheat your oven to 375°F (190°C).
- In a large pot, sauté onion and garlic until fragrant.
- Add the broccoli, cauliflower, carrots, and potatoes. Cook for 5 minutes.
- Stir in vegetable broth, thyme, salt, and pepper.
- Transfer the mixture to a baking dish.
- Sprinkle shredded cheese on top.
- Bake for 25-30 minutes until vegetables are tender.
Notes
- Feel free to add other winter vegetables like Brussels sprouts.
- Use your favorite cheese for different flavors.
