Ingredients

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large pot, sauté onion and garlic until fragrant.
  3. Add the broccoli, cauliflower, carrots, and potatoes. Cook for 5 minutes.
  4. Stir in vegetable broth, thyme, salt, and pepper.
  5. Transfer the mixture to a baking dish.
  6. Sprinkle shredded cheese on top.
  7. Bake for 25-30 minutes until vegetables are tender.
