- 1 cup wild rice
- 1/2 cup dried cranberries
- 4 cups vegetable broth
- 1/2 cup chopped onions
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped parsley
Instructions
- Rinse the wild rice under cold water.
- In a saucepan, heat olive oil over medium heat.
- Add onions and sauté until translucent.
- Stir in wild rice and cook for 2 minutes.
- Add vegetable broth, salt, and pepper. Bring to a boil.
- Reduce heat, cover, and simmer for 45-50 minutes.
- Stir in cranberries and parsley before serving.
Notes
- This dish can be served warm or cold.
