Delicious white chocolate raspberry cheesecake bars with a creamy texture and a fruity twist.

- 1 cup graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup white chocolate chips, melted
- 1/2 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup raspberry puree
- Fresh raspberries for garnish
Instructions
- Preheat your oven to 325°F (160°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter.
- Press the mixture into the bottom of a lined baking pan.
- In another bowl, beat cream cheese until smooth.
- Add melted white chocolate and sugar, mix well.
- Add eggs one at a time, then vanilla extract, mix until smooth.
- Spread the cream cheese mixture over the crust.
- Dollop raspberry puree on top and swirl with a knife.
- Bake for 30-35 minutes until set.
- Let cool, then refrigerate for at least 2 hours before cutting.
- Garnish with fresh raspberries before serving.
Notes
- Use fresh raspberries for best flavor.
- Store leftovers in the refrigerator.
- Can be made a day in advance.
