Description

A hearty white bean soup with bacon for a comforting meal.


Ingredients

  • 2 cups white beans, soaked overnight
  • 6 strips bacon, chopped
  • 1 onion, diced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cloves garlic, minced
  • 6 cups chicken broth
  • 1 teaspoon thyme
  • 1 bay leaf
  • Salt and pepper to taste

Instructions

  1. Drain and rinse the soaked beans.
  2. In a large pot, cook the bacon over medium heat until crispy.
  3. Add onion, carrots, and celery to the pot. Cook until softened.
  4. Stir in garlic and cook for 1 minute.
  5. Add beans, chicken broth, thyme, and bay leaf.
  6. Bring to a boil, then reduce heat and simmer for 1 hour.
  7. Season with salt and pepper.
  8. Remove bay leaf before serving.

Notes

  • Can substitute beans with canned white beans for quicker preparation.
