Description
A hearty white bean soup with bacon for a comforting meal.
Ingredients

- 2 cups white beans, soaked overnight
- 6 strips bacon, chopped
- 1 onion, diced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cloves garlic, minced
- 6 cups chicken broth
- 1 teaspoon thyme
- 1 bay leaf
- Salt and pepper to taste
Instructions
- Drain and rinse the soaked beans.
- In a large pot, cook the bacon over medium heat until crispy.
- Add onion, carrots, and celery to the pot. Cook until softened.
- Stir in garlic and cook for 1 minute.
- Add beans, chicken broth, thyme, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Season with salt and pepper.
- Remove bay leaf before serving.
Notes
- Can substitute beans with canned white beans for quicker preparation.
- Adjust seasoning according to taste.
