Description
A comforting white bean rosemary soup that warms you up.
Ingredients

- 2 cups white beans, cooked
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 4 cups vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- Salt and pepper to taste
Instructions
- Heat olive oil in a pot over medium heat.
- Add chopped onion and garlic, sauté until translucent.
- Add cooked white beans and vegetable broth.
- Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add fresh rosemary, salt, and pepper.
- Blend the soup until smooth, if desired.
- Serve hot.

- Use canned beans for quicker prep.
